‘Make restaurants display FOG ratings’ demand

Restaurants should be made to display their record for managing fat, oil and grease (FOG) as part of their published hygiene assessment, said a representative of Southern Water.
Stephen Williams who is the company’s network protection and enforcement officer, was speaking at this week’s WWT Wastewater 2018 conference.
He said his employer was in discussions with Defra and the Food Standards Agency to introduce a statutory requirement for proper records to be kept on grease management regimes in place.
To date there has been only three success prosecutions of food establishments for causing FOG blockages. Two were conducted by Severn Trent with the latest victory (reported recently in Process Engineering) occurring in January against a restaurant in Shrewsbury.
