Increase cheese production

A novel way of increasing cheese production has been developed by Memtech (UK). Using an ultrafiltration (UF) membrane, Memtech's crossflow filtration system is used to preconcentrate milk before it is added to the cheese vats. This produces higher solids, which in turn renders higher cheese yield from the same volume of milk.
Introducing preconcentrated milk in this way can increase cheese production by between 10 and 20 per cent, says Memtech, without more expensive cheese vats being needed. And there is an added saving as the UF permeate can be fed back into the whey.
