Lump-free liquid chocolate for Wall's
15 Jan 2000
Improved efficiency in the filtering of liquid chocolate has been achieved by Wall's Ice Cream after installation of three Russell Finex self-cleaning filters.
One of the main benefits of the machines has been in the removal of oversize particles they can cope with particles down to 1100 to 1200 microns. The job was previously carried out by twin-basket filters. Although these can operate down to less than 400 microns, this performance brings with it the problem that they can become clogged. The Finex filters, however, feature a microscreen that is continually wiped clean by an automatic, air-operated wiper blade. The blade clears the apertures helping to ensure an uninterrupted liquid flow and keeping pressure build-up to a minimum.
Made from stainless steel, the self-cleaning filters are fitted with heating jackets and are enclosed to protect the chocolate from airborne contamination.
