Atlas kneads the dough

Aimed at specialised applications in bakery production, the Atlas Double Helix range of bowl mixers is designed both for efficiency and ease of maintenance, the company says.
Resembling a scaled-up kitchen mixer, the Double Helix `offers perfect mixing of demanding wheat and wholemeal doughs,' Atlas claims. It can also handle more delicate fruited doughs. Two models, with capacities of 185litre and 370litre, are capable of mixing at 100rpm and kneading at 200rpm.
Maintenance features include automatic engagement and release of the mixer bowl, which is sealed by a spring-loaded ring to prevent flow escaping during mixing.
